The finest ingredients
Gamze Gold Bacon begins with heritage breed black pigs raised using free range regenerative farming methods.
For the final six weeks, the pigs, multi-award-winning Limestone Pork from the Limestone Coast in South Australia, are finished on a diet of acorns and macadamia nuts, ensuring a rich and unique flavour profile.
"We are committed to sustainable and ethical farming practices and the quality of our ingredients is paramount, and it shines through in every mouthful of our bacon.
“The brine used for curing the bacon features Three Bays mineral water, Australian Manuka Honey, and Murray River Pink Salt and these ingredients were chosen for their purity and exceptional qualities, contributing to the unparalleled taste and texture of our bacon. The final product is then garnished with gold flakes to deliver the full opulent experience.” Brendan said.
Artisanal craftsmanship
The bacon undergoes a meticulous cold smoking process, double-smoked with retired wine barrels for over 16 hours.
Brendan says, "Our smoking techniques are a blend of tradition and innovation and we use retired wine barrels to impart a distinct, rich flavour that is truly unique to Gamze Gold Bacon."
