Sweet & Smoky Mexican Shredded Beef
Looking for an easy, set & forget family dinner? This delicious slow cooker recipe from the talented @wholesomefoodiemel is packed with flavour and perfect for busy weeknights.
Ingredients
• 1kg beef chuck steak
• 1 brown onion, sliced
• 400g crushed tomatoes
• 2 tbsp tomato paste
• 1 cup beef stock
• 3 tbsp BBQ sauce
• 1 tbsp brown sugar
• 1 tbsp ground cumin
• 1 tbsp smoked paprika
• 2 tsp dried oregano
• 1 tsp garlic powder
• 1 tsp sea salt
• ½ tsp black pepper
Simple Salsa
• 250g cherry tomatoes, diced
• ½ red onion, finely diced
• Juice of 1 lime
To Serve
• Steamed rice
• Corn chips
• 2 avocados, smashed
• Shredded cheese
Method
Add the onion, crushed tomatoes, tomato paste, beef stock, BBQ sauce, brown sugar and all the spices to your slow cooker. Stir to combine.
Place the beef chuck on top, cover and cook on LOW for 8 hours or HIGH for 5–6 hours.
Shred the beef using two forks and stir it back through the sauce.
Combine the cherry tomatoes, red onion and lime juice to make the salsa.
Serve the shredded beef over steamed rice with the fresh salsa, smashed avocado, shredded cheese and corn chips.

July marks the beginning of Koala Trauma Season, making the work of the incredible team at Currumbin Wildlife Hospital more important than ever.
Meet Bamse, an 18 month old koala who`s making history! 🐨✨
Bamse has become the first wild koala to receive a groundbreaking chlamydia vaccine implant, developed through a partnership between Currumbin Wildlife Hospital & QUT. This innovative implant delivers both vaccine doses in a single examination, reducing stress for koalas while helping protect the future of this iconic species.
After treatment, Bamse was released back into her Burleigh bushland home the very same day. She`s now wearing a GPS collar & will be closely monitored over the coming months as researchers track the success of this world first breakthrough.
With Koala Trauma Season now underway, every donation helps support the life saving work being done for our precious wildlife.
