🍋 Slow Cooked Lemon & Thyme Lamb by @wholesomebysarah⁠

Fall apart. Golden on top. Packed with flavour.⁠

You’ll need:⁠
⁠
• 1.5 to 2 kg lamb shoulder⁠
• 1 brown onion⁠
• 1½ cups beef stock⁠
• 3 garlic cloves⁠
• 2 tbsp olive oil⁠
• 1 tsp salt⁠
• ½ tsp cracked pepper⁠
• Zest of 1 lemon⁠
• 2 tsp fresh thyme⁠
⁠
How to make it:⁠
Mix garlic, oil, salt, pepper, lemon zest & thyme into a paste.⁠
Add chopped onion to the base of your slow cooker.⁠
Place lamb on top & rub all over with the mixture.⁠
Pour stock around the lamb.⁠
Cook on low 8 to 10 hours or high 5 to 6 hours.⁠
Finish in a 220°C oven for 10 to 15 mins until golden & caramelised.⁠

Spoon over the juices. Slice or shred. Done. 🙌⁠
