We haven’t shared a recipe for a while… but when we saw this one, we knew it was time to start again! 😄 Thanks to @simplehomeedit for the inspo, this one is so good.
Easy Chicken Satay Rice Bowls 🥜
Satay Sauce
• 400ml coconut milk
• ½ cup chicken stock
• ⅓ cup smooth peanut butter
• 1 tbsp kecap manis
• 1 tsp dark soy sauce
Whisk everything together until smooth & set aside.
Chicken
• 2 tbsp oil
• 1 brown onion, finely diced
• 1 tbsp minced garlic
• 500g chicken mince
• 1 tbsp mild curry powder
• ½ tsp turmeric
• 1 tsp paprika
• 1 tsp sugar
• ½ tsp salt
Heat oil in a pan over mediumhigh heat. Cook onion & garlic for 1–2 minutes until fragrant. Add chicken mince & cook for 3–4 minutes, breaking it up while leaving a few chunky bits (texture = 👌).
Add a splash of water if needed, then stir through curry powder, turmeric, paprika, sugar & salt.
Pour in the satay sauce & simmer for 3–4 minutes until thick, glossy & creamy.
To Serve
• Steamed rice
• Sliced cucumber
• Red onion
• Crushed peanuts
• Fresh coriander
• Lime wedges (this is the game changer)
• Chilli oil if you like a little kick 🌶️
Serve over rice, load up the toppings & enjoy! 🍜✨
