SMASHED CUCUMBER SALAD 🥒 by @creamy_confusion
Fresh, crunchy & packed with flavour! This easy smashed cucumber salad is the perfect side for lunch or dinner.
Serves 2–3
INGREDIENTS
• 3 Lebanese cucumbers
• 50g feta, crumbled
• 10g fresh dill, fronds only
• ½ red onion, finely diced
• 2 tbsp toasted sesame seeds
• Freshly cracked black pepper, to taste
DRESSING
• Juice of 1 lime
• 1 tbsp Dijon mustard
• 2 tbsp olive oil
• Sea salt, to taste
METHOD
Start with the dressing. Add the Dijon to a jar, followed by the lime juice & olive oil. Pop the lid on & shake well. Season with sea salt, then taste & adjust the lime or oil if needed.
Cut the cucumbers into uneven triangular pieces. Place them seed side down on a chopping board & gently smash them using something heavy, like the back of a knife or a pestle.
Give them a good smash so the cucumbers crack & break open. This creates lots of little crevices for the dressing to soak into. You’ll also lose some of the excess water & seeds.
Add the smashed cucumber to a bowl with the crumbled feta, chopped dill, diced red onion & a few cracks of black pepper.
Pour over the dressing & toss everything together.
Finish with a generous sprinkle of toasted sesame seeds.
