Creamy, crispy, herby & packed with flavour. The perfect side for your next BBQ, picnic or family get together.

Crispy Bacon & Herb Potato Salad
Ingredients
1.2kg baby potatoes, unpeeled
250g streaky bacon, finely chopped
150g whole egg mayonnaise
100ml sour cream
1 tbsp Dijon mustard
1 tsp red wine vinegar
Zest & juice of ½ lemon
Pinch of cayenne pepper
½ bunch spring onions, finely chopped
10 cornichons, sliced
1 handful flat leaf parsley, finely chopped
1 bunch chives, finely chopped
3 dill fronds, finely chopped
Salt & black pepper
Method
1. Cook the potatoes
Place the potatoes in a large saucepan of cold, salted water. Bring to the boil, then reduce to medium heat & simmer for 20 to 25 minutes, or until tender when pierced with a knife.
Drain & allow to cool slightly. Once cool enough to handle, peel & cut into even cubes.
2. Cook the bacon
While the potatoes are cooking, add the chopped bacon to a large frying pan over low heat. Slowly increase the heat to medium, cooking for around 5 minutes until golden & crispy.
3. Make the dressing
In a large bowl, mix together the mayonnaise, sour cream, Dijon mustard, red wine vinegar, lemon zest & juice, cayenne pepper, salt & pepper.
Stir through the spring onions, cornichons & herbs, reserving a little of the herbs for serving.
4. Bring it all together
Add the warm potatoes to the dressing, along with half of the crispy bacon.
Gently toss until the potatoes are well coated.
5. Finish & serve
Scatter over the remaining crispy bacon & reserved herbs.
Serve warm or at room temperature & enjoy!
