Looking for something fresh, flavour packed & super easy to throw together? This Bang Bang Chicken Salad recipe by @vj_cooks is a must try.
Bang Bang Dressing
• 2 Tbsp peanut butter
• 3 Tbsp low salt soy sauce
• 2 Tbsp rice wine vinegar
• 2 Tbsp sweet chilli sauce
• 1 tsp brown sugar
• 2 cloves garlic, crushed
• 1 Tbsp lemon juice
• 2 Tbsp water
Mix together & set aside.
Salad
• 350g rotisserie chicken, shredded
• 1 carrot, finely sliced
• ½ cucumber, sliced
• ½ iceberg lettuce, sliced
• Bean sprouts
• Spring onion
• Roasted peanuts
• Sesame seeds
• Chilli oil (optional)
• Fresh coriander or mint
Toss everything together with the dressing, top with peanuts & herbs, then serve with lemon wedges. Too easy!
