Slow Cooked Beef Casserole from @simple.home.edit⁠

A hearty winter classic, rich, tender beef with vegetables cooked low and slow until melt-in-your-mouth perfect. 💛 Don’t forget to save this one for your next slow cooker night 🍲✨⁠
⁠
Ingredients:⁠
800g beef chuck cut into chunks⁠
2 tsp sea salt flakes⁠
1 tsp black pepper⁠
2 tbsp olive oil⁠
2 brown onions, finely diced⁠
1 tbsp garlic, chopped⁠
1 tbsp tomato paste⁠
35g plain flour⁠
250ml dry red wine ⁠
1L water⁠
2 tsp beef stock powder⁠
4 sprigs thyme (or 1 tsp dried thyme)⁠
1 bay leaf⁠
1 tsp sugar⁠
4 large carrots, sliced⁠
500g baby potatoes, halved⁠
Crusty bread, to serve⁠
⁠
Method:⁠
1. Season the beef with salt and pepper.⁠
⁠
2. Brown the meat. Heat olive oil in a large pan over medium–high heat.⁠
Cook beef in batches for 3–5 minutes until browned. Set aside.⁠
⁠
3. Add onion and garlic and cook for 3–5 minutes until softened.⁠
⁠
4. Stir in tomato paste, then return beef (and any juices) to the pan.⁠
⁠
5. Stir in flour until combined. Add red wine and cook for 1–2 minutes.⁠
⁠
6. Slow cook, add water, stock powder, thyme, bay leaf and sugar.⁠
Cover and simmer on low for 2 hours.⁠
⁠
7. Add carrots and potatoes, stir gently, cover again and cook for 1 more hour.⁠
⁠
8. Finish, Beef should be tender and fall apart easily. If needed, cook a little longer and add a splash of water if it reduces too much.⁠

🍞 To serve: Ladle into bowls and serve with crusty bread for dipping.⁠
