Zucchini Slice – Easy Lunchbox Favourite ✨

Ingredients:
5 Free Range Eggs
1 cup Self Raising Flour (sifted)
1 large Zucchini (grated & squeezed)
1 large Onion (finely chopped)
200g Bacon (optional, chopped)
1 cup Grated Cheddar Cheese
1/4 cup Vegetable Oil
Method
Preheat oven to 170°C (fan forced).
In a large bowl, whisk the eggs. Add flour and mix until smooth.
Stir in zucchini, onion, bacon, cheese & oil until combined.
Grease & line a 30 x 20cm baking dish. Pour mixture in.
Bake for 30 minutes, or until golden & cooked through.
Perfect warm or cold, slice it up for lunchboxes, snacks or an easy dinner.
