Beetroot, Rocket & Feta Salad 🥗 by @recipe_tin
A fresh, no-fuss salad that comes together in minutes!
Ingredients:
250g canned baby beetroot, halved or quartered if large
120g baby rocket (arugula)
60g feta (Danish or Greek) or goats cheese
3 tbsp walnuts, lightly crushed
Dressing:
2 1/2 tbsp extra virgin olive oil
1 tbsp balsamic vinegar
1 tbsp honey
1/2 tsp salt
Black pepper
Method:
Add all dressing ingredients to a jar and shake well until combined (break up the honey if needed). Taste & adjust seasoning.
Place rocket in a serving bowl.
Scatter over beetroot, no need to toss.
Crumble over feta & sprinkle with walnuts.
Drizzle over dressing & serve immediately.
