Footy finals weekend calls for the ultimate crowd-pleaser, a cheesy bacon cob loaf! 🏉🧀
You’ll need:
• 500g cob loaf
• 1 tbsp olive oil
• 1 small onion, finely chopped
• 200g shortcut bacon, diced
• 2 tbsp chopped chives
• 250g cream cheese, softened
• ⅔ cup cooking cream
• ⅔ cup light sour cream
• 1½ cups grated cheddar cheese
• 1 French stick or baguette, sliced
• Extra chives to serve
Preheat your oven to 180°C or 160°C fan-forced. Cut the top from the cob loaf & scoop out the centre, keeping the bread pieces for dipping.
Cook the onion & bacon in a frying pan until golden, then stir through the chives, cream cheese, cooking cream, sour cream & grated cheese. Season with salt & pepper.
Spoon the mixture into the cob loaf, arrange the bread pieces & sliced baguette around it, then bake for 20 minutes or until golden & toasted.
Top with extra chives, serve warm & watch it disappear before half-time! 🙌
