🍋 Slow Cooked Lemon & Thyme Lamb by @wholesomebysarah
Fall apart. Golden on top. Packed with flavour.

You’ll need:
• 1.5 to 2 kg lamb shoulder
• 1 brown onion
• 1½ cups beef stock
• 3 garlic cloves
• 2 tbsp olive oil
• 1 tsp salt
• ½ tsp cracked pepper
• Zest of 1 lemon
• 2 tsp fresh thyme
How to make it:
Mix garlic, oil, salt, pepper, lemon zest & thyme into a paste.
Add chopped onion to the base of your slow cooker.
Place lamb on top & rub all over with the mixture.
Pour stock around the lamb.
Cook on low 8 to 10 hours or high 5 to 6 hours.
Finish in a 220°C oven for 10 to 15 mins until golden & caramelised.
Spoon over the juices. Slice or shred. Done. 🙌

Gruyère is a Swiss style Alpine cheese that’s sweet yet slightly salty, with a flavour that deepens beautifully as it ages.
When young, it’s creamy and nutty. As it matures, it becomes more earthy, complex and full bodied.
Perfect for baking, melts like a dream in a toastie, and pairs beautifully with Riesling, cider and beer.
