High-Protein Chickpea Crunch Salad
Fresh, filling & perfect for busy days!

Serves: 4
Prep time: 15 mins
Ingredients
80g Danish feta, crumbled
160g high-protein Greek-style yoghurt
1 tbsp white balsamic vinegar
1 tbsp fresh lemon juice
2 x 400g cans no added salt chickpeas, rinsed & drained
½ small red onion, finely chopped
3 celery sticks, finely chopped
1 red capsicum, deseeded & finely chopped
1 Lebanese cucumber, quartered & thinly sliced
¼ cup (45g) sultanas
Fresh parsley, chopped (optional, for serving)
Method
1. In a small food processor, blend feta, yoghurt, balsamic & lemon juice until smooth & creamy.
2. In a large bowl, combine chickpeas, onion, celery, capsicum, cucumber & sultanas.
3. Add the creamy dressing & gently toss to coat.
4. Season with salt & pepper, then sprinkle with fresh parsley to serve.
Protein boost: Chickpeas + Greek yoghurt + feta = a triple win for energy & satisfaction!
