Self Saucing Chocolate Pudding by @wellnourished
A rich, gooey chocolate dessert with a fluffy sponge topping... the ultimate cosy winter treat! 🤎
Serves: 4
Prep: 15 mins
Cook: 20–30 mins
Pudding:
80g butter, melted
½ cup milk of choice
1 egg
2 tsp baking powder
2 tbsp coconut sugar
2 tbsp cacao powder
1 cup wholemeal spelt flour
Chocolate Sauce:
½ cup rice malt syrup, honey or maple syrup
2 tbsp cacao powder
1 cup boiling water
Method:
1️⃣ Preheat oven to 180°C & grease a baking dish or 4 large ramekins.
2️⃣ Whisk together the butter, milk, egg, baking powder, coconut sugar & cacao until smooth.
3️⃣ Gently fold in the flour until just combined.
4️⃣ In a jug, mix together the rice malt syrup (or honey/maple syrup), cacao & boiling water.
5️⃣ Spoon the pudding batter into your dish or ramekins.
6️⃣ Slowly pour the chocolate sauce over the back of a spoon so it gently covers the batter.
7️⃣ Bake for:
• 20 mins for ramekins
• 30 mins for one large dish
8️⃣ Serve warm with fresh berries & a dollop of cream... then dig into that gooey chocolate centre! 🤎
