Loaded Potato Salad Recipe
The ultimate crowd-pleaser for BBQs, picnics & family dinners!
Ingredients:
1.5kg baby potatoes
6 slices streaky bacon, cooked & crumbled
4 hard-boiled eggs, chopped or grated
1 cup sharp cheddar, grated
4 spring onions, finely sliced (plus extra to garnish)
Dressing:
¾ cup whole-egg mayonnaise
¼ cup sour cream
1 tbsp Dijon mustard
1 tbsp apple cider or white wine vinegar
1 tsp garlic powder
Salt & cracked black pepper, to taste
Method:
Cook potatoes, boil in salted water for 18–20 mins, or until tender. Drain, cool slightly & cut in half (peel skins if you like). Make the dressing, whisk mayo, sour cream, mustard, vinegar, garlic powder, salt & pepper in a bowl until smooth. Assemble in a large bowl, combine potatoes, bacon, eggs, cheddar & spring onion. Add dressing & toss gently. Garnish with extra spring onion & enjoy straight away!
